In 1994, he co-founded Geggy Tah with Tommy Jordan, and their demo caught the attention of David Byrne, leading to a signing with Luaka Bop. Geggy Tah's debut album, "Grand Opening," showcased Kurstin's diverse talents, playing multiple instruments and handling songwriting, producing, and vocals. Their song "Whoever You Are" gained popularity in 2001 after featuring in a Mercedes-Benz ad. Following this success, Geggy Tah released "Sacred Cow" and "Into the Oh." From 2004 to 2010, Kurstin co-founded The Bird and the Bee with Inara George, producing albums characterized by a blend of bossa nova and pop. His work with Lily Allen on her debut album "Alright, Still" brought him further acclaim, as he co-wrote and produced the entire record. Their collaboration continued with Allen's second album, "It's Not Me, It's You," yielding chart-topping singles and earning Kurstin three Ivor Novello Awards. Kurstin's partnership with Sia began with the track "Death by Chocolate" and evolved into producing her album "We Are Born," which garnered critical acclaim. He also worked with Kelly Clarkson, Pink, and Adele during this period, earning Grammy nominations and producing hit songs like Clarkson's "Stronger (What Doesn't Kill You)" and Adele's "Hello."

From 2016 onwards, Kurstin's career continued to soar. He achieved Grammy success with Adele's album "25," winning multiple awards.
